Half and Half- Dairy product found in the refrigerated section- usually has a fat content of about 10.5-18%-If you don't have half and half, you can use a combination of milk and heavy whipping cream. The goal is to get the milkfat to be in the range of 10.5-18%. Many use ½ milk and ½ heavy whipping cream to make half and half. But, technically, that combination will have a higher milkfat than half and half does. A better ratio would be using ¼ heavy whipping cream to ¾ whole milk.
